Once again, like every year, Toledo goes along with Guatemalan families as they celebrate All-Saints’ day with their traditional ‘fiambre’, a dish whose preparation involves lots of cured meats and pickled veggies, but with a recipe that is unique to every family.
Part of the charm of this celebration is that everyone in Guatemala thinks that their own family’s version is the best. With this in mind, we arrived at a unique perspective: the most important ingredients for the preparation of this emblematic dish are not actually in it, but rather, around it. That is: family, and more precisely, each of its members brings a different flavor to the table. No two families are alike. Each one has its own recipe.
